If you have a BOAT LOAD of Zucchini this summer, here is a ZUCCHINI BOAT recipe that is quite yummy and might help you out. ha!
Zucchini Boats (or Zucchini Pizzas, as my sons call them) are an extremely satisfying, easy and quick summertime meal. A super zucchini stash buster idea for all of those zuccs that seem to overload us in the middle of July.
|...and it's pretty too|
|slice zucchini in half and gut the middle with a spoon or knife|
|Add a bit of butter, olive or coconut oil and Bread Crumbs to the bottom layer of each "boat"|
|We used this brand and we really liked the flavor|
|add a mix of shredded cheeses (we used Mozzarella and cheddar and Jack)|
|Don't forget the garlic! Minced a few cloves and dumped on top of the cheeses|
|diced tomatoes, chopped basil and rosemary (any herbs you like), a bit of S&P on top of the cheese|
|I put pepperoni on some, just tomatoes on others|
|Bake at 375 for "around" 30 minutes or until you can slice easily with a knife. The cheese will be all bubbly and gooey like a pizza. You'll know if it needs more time if the zucchini is too stiff to cut easily.|
