Blueberry Day! recipes for a pie and a cobbler

We picked a ton of blueberries. "We" meaning my crew and my Mama and Poppy.  Local organic berries. My youngest son was wringing his hands together in anticipation of a pie or cobbler.  We made both. He was really happy.  I love to make him happy.  That's what Mamas do, eh?  Sugar and all, we love to make our boys smile.  :)

even this boy, who does not normally like to eat anything sweet (he is a sour lover) ate a piece of pie....and loved it.  I *think* this was his first piece of pie and I was tickled that it was one that I (and baby brother)  made.

For the pie:

1 crust (your way)
7 cups of blueberries
1/2 cup flour (we used GF almond flour) but any will do
3 tablespoons of lemon (or more...we used the juice of one entire lemon, I am not a very good  person for measuring)
2/3 cups sugar (we  used organic Sugar in the Raw)
pinch of salt
pinch of all spice
pinch of cinnamon

mix the dry ingredients around in a bowl and add the juice.  Mix again.  Then add the lemon and mix again.  Then the berries and dump into the pie shell. Add the top layer of crust and put slice or hearts or initials or whatever your fancy.  Bake for 350 for about 35-40 minutes.  Easy Peasy Lemon Squeezy

For the Cobbler:
7 (or less) cups of blueberries
3 cups Oatmeal (we used GF oatmeal)
2-5  pats butter
pinch of salt
pinch of cinnamon
pinch of allspice
1/4 cup sugar (we used organic Sugar in the Raw)
1/4 cup chia seeds plus 1/4 cup hemp seeds (optional)
2/3 cup flour (we use ground Almond Flour)
HUGE squeeze of lemon

Put berries in a greased pan (we used coconut oil)
Mix the dry ingredients and dump on top of the berries
cut up the butter and put around on top of the "crumbled" dry ingredients
bake on 350 for about 35 minutes
I like my berries still a bit hard and tart (ish) so adjust to your liking.
