I HEART WORDS. Word bring me joy. Words are alive

A few words that inspired me this week:

Look, I really don't want to wax philosophic, but I will say thatif you're alive, you got to flap your arms and legs,you got to jump around a lot,you got to make a lot of noise, becauselife is the very opposite of death.And therefore, as I see it, if you're quiet, you're not living.You've got to be noisy, or at least your thoughts should be noisy and colorful and lively.

Tomatoes sliced and diced-about 15...+ I added some sliced Pear Tomatoes in with it
Cilantro chopped-about 1 "bunch"
lime and lemon juice - about 2 tablespoons each
Red Onion (the secret love of my life!) - 1 whole onion chopped up small
3 cloves garlic
1 tsp sea salt
pinch of thyme (optional)
1 tsp brown rice syrup (or you can use sugar)
black beans

chop, slice, dump, mix and let sit in fridge (if you can wait!!) overnight.

HOME MADE TORTILLA CHIPS to go with the salsa:

cut up corn tortilla wraps with a knife or pizza cutter into 6 or 8 wedges
dump salt and sprinkle with lime juice
Bake 350 for 20 minutes, checking often

oooo yea, I'm hungry now! :)


I got this GRANOLA recipe from a friend in my Home School Support Group and added some stuff to it for my family and thought since it was sooo easy and yummy, that I would share. :)


Mix together this...

5 Cups Oatmeal
1 Tsp. cinnamon

Beat together this...

1/2 Cup Organic Honey
1/2 Cup Organic Olive Oil

Combine above on a baking sheet and bake at 300 degrees for 25-30 minutes, shuffling around every now and again.

I added flax seeds, sliced almonds and cranberries to the mix. It turned out GREAT!!!

You could also add some hemp seeds or any other nuts to make it even more nutritious and delicious!
